Dinner Ideas

I am usually really good about coming up with dinner ideas. The past few weeks however I have been drawing a serious blank.... that is where you all come in!! I would love to hear your favorite recipe or meal idea. Not only will this help spark some inspiration and ideas for me, but if there are others out there in the same rut hopefully it will help you out as well.
Don't be shy, feel free to post multiple ideas :)

Hey Girl-
Since we have been getting meals, I haven't been doing any cooking myself, but one of my favs was an Asian salad that Sabine made for us. It was made w/ shredded cabbage, broken up ramen and cashew pieces with an asian dressing on top. I have had it almost every day for lunch and such just changing it up a bit each time.

Here is my new favorite recipe. It's a little detailed but it's worth it! A great thing is you can do it all the night before and then have it the next day. It doesn't need to be warm! You can also have it for dinner one day and then make a salad with it the next. YUM YUM! It's from Cuisine at Home: (P.S. change your white background - it's hard to read your green letters:-))

Thai Chicken Wraps

1 cup fresh cilantro leaves, packed
6 T brow sugar, divided
6 T fresh lime juice, divided
2 T Thai red curry paste, divided
¼ t red pepper flakes
Salt to taste
2 lbs boneless skinless chicken breast, Sliced long and very thin
½ cup creamy peanut butter
½ cup water
¼ cup shallots, chopped
¼ cup soy sauce
2 T fresh ginger, chopped
3 garlic cloves, chopped
Bibb lettuce (any red leaf lettuce will work)
Red Bell Pepper – cut into strips
Cucumber – cut into strips
Cilantro
Lime wedges (we have not used this)


Blend: cilantro, 4 T brown sugar, 2 T lime juice, 1 T curry paste, pepper flakes and salt in a food processor until smooth. Pour over chicken, toss to coat and marinate 10-30 minutes. Put in a foil pan and BBQ until done.

Process: 2 T brown sugar, 4 T lime juice, 1 T curry paste, peanut butter, water, shallots, soy sauce, ginger and garlic in the processor (not necessary to clean) until smooth. Transfer to a serving dish.



To serve: Wrap chicken, bell pepper, cucumber and cilantro in lettuce. Drizzle with peanut sauce and lime juice.

In the summer, Robert and I love Taco Salad minus the meat. Not that we are vegetarians, but we don't like to heat up our house that doesn't have air conditioning.

lettuce- any type, your fav
black beans drained
red kidney beans drained
salsa
sour cream
cheese shredded
black olives
tomatoes

Your favorite dressing:
I like ranch or catalina
Robert likes honey dijon

Megs: This is one of our favorite summer treats. Super easy. No cooking involved...


Greek Salad

1 red onion
1 cucumber
1 block of feta cheese
kalmata olives
capers
2 tomotoes
2 green peppers

cut 'em up and toss with olive oil and oregano and a little salt and pepper

Megan-
You may already do this, I just started. I put quite a few chicken breasts in the crock with a little bit of water and different seasonings. Cook on high for 3 1/2 to 4 hours and then cut up/shred and put in freezer/microwave containers. This way when you want to have chicken in a meal you can just heat it up and add. It cuts down the prep time for your meal. Yay!

the only thing i can recommend is straw hats. hahaha Remember those in Corvallis?
